Delicatessen

Delicatessen

Delicious x R.W. Munson, TVM 1902

Of all our uniquely different wines, Delicatessen is our only grape that is red in pulp and red in skin, making it our inkiest wine. Deep purple and profoundly refreshing, this wine is delicate and agreeable, without convolution.

Vine Characteristics

  • Light vigor and small leaves.

  • Small tight clusters with medium size berries.

  • Fruit has a deep blue color.

  • Has potential to crop heavily and still ripen fruit to desirable quality.

Winemaker’s Notes

  • Has a very similar color to blueberry concentrate, dark blue with a deep red rim.

  • Very little to no perceivable tannin. Intensely aromatic like wild blueberries, lychee, and a slight herbal sage note.

  • Thin skin that disintegrates during fermentation but holds up remarkably to heavy rain.

  • Excellent low acidity and ideal pH for stability.

  • Low brix accumulation requires chaptalization for ideal alcohol content.
